Challenge: Day 1 Healthy Eating Breakfast Egg White Recipe

Standard

Egg White Scramble

5 eggs
1/4 cup manchego cheese
1 shallot
1 garlic clove
1 pinch pepper

Directions:
Chop shallot and garlic. Put shallots and garlic in sauté pan and sauté till carmelized.

Seperate egg whites from four of the eggs. Add the other whole eggs to mixture and whip till well blended and there are a significant amount of bubbles in the mixture. Then add to pan.

Shred 1/4 cup manchego cheese. Add half of the cheese to the eggs. Cook for about 5 minutes on medium heat or until fully cooked.

Top cooked eggs with the remaining cheese and enjoy.
